Hawaiian Turkey Stir-Fry

Ingredients

1 1/2 lbs. Boneless Skinless Turkey Breast or Thighs, cut into 1 inch cubes
2 T. Vegetable Oil
1 medium Onion, finely diced
2 medium Carrots, peeled and julienned
2 large Sweet Peppers, cored and diced into 1 inch cubes
2 T. Fresh Ginger, minced
3 cloves Garlic, minced
1/2 c. Reserved Pineapple Juice
1/3 c. Soy Sauce
2 T. Rice Vinegar
2 T. Brown Sugar
2 T. Cornstarch, mixed with 1 T. water
1 (15 oz.) can Pineapple Tidbits, drained and juice reserved
Hot Rice for serving

Cooking Directions

1.
In a large skillet over medium high heat, heat oil until shimmery.

Add turkey, onion and carrots and saute 5 minutes until lightly browned.
3.
Add peppers and saute 5 additional minutes until peppers are slightly softened.
4.
Reduce heat to medium and add ginger and garlic.
5.
Saute 1 minute until fragrant.
6.
Add pineapple juice, soy sauce, vinegar, sugar and cornstarch mixture and frequently stir until sauce is thickened and bubbly.
7.
Add pineapple tidbits.
8.
Serve stir-fry over hot rice.
