Rosemary Parmesan Turkey Noodle Soup

Ingredients

1 1/2 c. Cooked Turkey, chopped
3 qts. Chicken Stock
2 med. Carrots, sliced
3 Cloves Garlic, minced
4 Sprigs Fresh Thyme, chopped
1 Bay Leaf
2 Ribs of Celery, sliced
8 oz. Wide Egg Noodles
1 c. Mushrooms, sliced
1 med. Onion, diced
2 T. Fresh Parsley, chopped
2 Sprigs Fresh Rosemary, chopped
3/4 c. Heavy Cream
3/4 c. Parmesan Cheese (additional for topping)

Cooking Directions

1.
Bring stock to a boil.
2.
Add carrots and cook for 3 minutes.
3.
Add garlic, thyme, bay leaf, and celery cook another 5 minutes.
4.
Add uncooked noodles and cook per package directions.
5.
When noodles are done, add mushrooms, onion, turkey, parsley, rosemary, heavy cream, and Parmesan.
6.
Cook another 5 -10 minutes.
7.
Add salt and pepper to taste.
8.
Top with Parmesan.
