Turkey Mango Salad

Ingredients

1 lb. Turkey Breast cutlets or tenderloins
2/3 c. Catalina Salad Dressing, divided
2 tsp. Canola Oil
1 c. Red Pepper, julienned
4 c. Lettuce Leaves, chopped
2 c. Fresh Mango, cubed

Cooking Directions

1.
Brush each turkey cutlet with 1 tablespoon Catalina dressing.

Lightly sprinkle with salt and black pepper.

Grill turkey using direct heat, about 4 to 5 inches from the heat, for 5 to 7 minutes per side, or until the internal temperature reaches 165°F.

Let the turkey sit for 5 minutes before slicing into thin strips. Meanwhile, heat oil in a skillet.

Add red bell pepper strips and sauté until tender.

Remove from heat and cool slightly.

Toss turkey, remaining salad dressing, red pepper, lettuce and mango together. Serve immediately.
